Tuesday:Chicken

So, yesterday I asked you all (all 5 of you readers! hee hee) to come up with some recipes every Tuesday. Tantalizing Tuesday!
Each week will have a theme.
Some of you are going to have a really long week when you realize that TODAY is actually Tuesday, not yesterday. ;) Hate it when that happens!

So, go ahead and let me have them!
I'm going to create a link and save them all in case anyone wants to check them out later!

In the pot put:
one pack chicken breasts
one onion (just for flavor) cut in half
4 red potatoes, cut into bite sized pieces
celery
add some garlic powder, salt, and pepper
cover w/ water and boil for 20 minutes!

Then, if you have a crock pot, transfer everything (even the broth) in there.
add one can each of peas, corn, carrots, greenbeans, and one can of chicken broth.
Cook on low for 5-6 hours
if you dont have a crock, just add all of the above to the pot on the stove. and let it simmer all day, on the lstove, on low, covered.

One of my favorite things to do, and the easiest, is to put some regular rice crispies in a giant ziplock bag and crunch them all up--not so that they're dust-like, but much smaller. Then I pour in the bag some garlic salt and some pepper and whatever other seasonings I feel like doing. Then I dredge chicken breasts in melted butter and put them in the bag and shake it like shake and bake. Sometimes I pour the stuff in a dish and coat them like I'm doing regular fried chicken.
When I'm done I bake them in the oven. The time varies by oven and size of the chicken breasts, but usually 35-40min at 350 is plenty.

The other favorite chicken dish is chicken fajitas. I cut up the chicken, green and red bell pepper and onion (to taste), put that in a frying pan and add some lemon juice to the pan. Then I cook it all in the frying pan, adding garlic salt, chili powder, and pepper (and sometimes mexican or fajita spices).
When the chicken is cooked and the bell peppers are softened, I put them in tortillas with grated chedder cheese.
Hubby adds hot sauce and sour cream to his.

Oh, this is a great idea! I have a great chicken recipe, too, but I can't remember it exactly. I'm out of town, writing this from the hotel room. When I get home, I'll comment again with the recipe.

Hi Jen!! I wanted to add to your list of yummy chicken recipes!! Hope you find some that you like!! We love this! And my kids gobble it up!!!

CHICKEN AND BLACK-BEAN GUACAMOLE TOSTADAS
This dish comes together in no time, especially if you have leftover chicken on hand and use purchased guacamole.


1 large ripe avocado, peeled, pitted
4 teaspoons fresh lime juice
2/3 cup canned black beans, rinsed, drained
2 green onions, chopped
Hot pepper sauce (such as Tabasco)

2 cooked chicken breast halves, shredded (about 1 3/4 cups)


1 tomato, seeded, chopped
2 tablespoons chopped fresh cilantro
1 teaspoon ground cumin
Lime juice


4 purchased tostada shells (crisp corn tortillas)
2 cups shredded lettuce
2/3 cup crumbled mild goat cheese (such as Montrachet) or
feta cheese (i usually don't use the cheese)
Purchased salsa(i usually don't even use salsa)


Place avocado in medium bowl. Add lime juice and mash until almost smooth. Mix in beans and green onions. Season guacamole to taste with hot sauce, salt and pepper.
Combine shredded chicken, tomato, cilantro and cumin in small bowl. Season chicken mixture to taste with lime juice, salt and pepper.

Arrange tostada shells on plates. Top with lettuce, guacamole and chicken mixture. Sprinkle with goat cheese. Spoon salsa over and serve. (I usually just use tortilla chips instead of tostadas. I just crumble the up chips and place the chicken mixture and guacamole on top)

Serves 4.

Okie let me share with you my favorite easy way to make chicken.

Stephanie's Salsa Chicken and Rice (crockpot)

Place an entire pack of boneless chicken breasts in your crock pot.

throw in a whole large yellow onion diced.

add a whole green or red (really any color) bell pepper cut up into hunks.

a small jar of your favorite salsa.

add a cup or so of water how ever much it takes to cover up the chicken and veggies.

Cook on low for 5-6 hours until the chicken is just falling apart

about 30-45 minutes before you are ready to eat add in a cup of dried rice and stir the dish up and cook until the rice is done.

Serve with shredded cheese and sour cream and sliced black olives for garnish. It's AWESOME and very little work. throw it together in the morning that night you have a no fuss dinner.

Really easy and really yummy! Even Ryan will eat it (and he's Mr. Picky). He calls it Honey Chicken. LOL.

Hawaiian Chicken

* 1 (10 oz) jar sweet and sour sauce
* 1 cup packed brown sugar
* 1/2 cup orange juice
* 1/4 cup butter, melted
* 4 skinless, boneless chicken breasts
* White rice

Directions:

Preheat oven to 400 degrees.

In a bowl, combine sweet and sour sauce, brown sugar, orange juice and melted butter. Mix well.

Place chicken in a greased 9x13 baking dish and pour sweet and sour sauce mixture over chicken.

Bake for one hour. Serve over white rice.

Ok, here is the other one that I wanted to share with you!

Chicken Kabobs Mexicana
Chicken and veggie skewers marinated in cilantro, lime,
and cumin. Serve with rice, salsa, and warm tortillas.
Prep Time: approx. 30 Minutes. Cook Time: approx. 10
Minutes. Ready in: approx. 1 Hour 40 Minutes. Makes 4 servings.

2 tablespoons olive oil
1 teaspoon ground cumin
2 tablespoons chopped fresh cilantro
1 lime, juiced
salt and ground black pepper
to taste
2 skinless, boneless chicken
breast halves - cut into 1 inch cubes
1 small zucchini, cut into
1/2-inch slices
1 onion, cut into wedges and separated
1 red bell pepper, cut into
1 inch pieces
10 cherry tomatoes


Directions
1 In a shallow dish, mix together olive oil, cumin,
chopped cilantro, and lime juice. Season with salt and pepper.
Add chicken, and mix well. Cover, and refrigerate for at
least one hour.
2 Preheat grill for high heat.
3 Thread chicken, zucchini, onion, red bell pepper, and
tomatoes onto skewers.
4 Brush grill with oil, and arrange skewers on hot grate.
Cook for approximately 10 minutes, or until chicken is
cooked through, turning to cook evenly.

A day late but here is mine..

Chicken Casserole

Boil Chicken in broth with onion for flavor (if you like onion, we don't). Debone chicken, cut into small chunks (I actually like to almost shred mine).

Mix 1 can cream of chicken soup with 1 8oz sour cream. Season with salt and pepper.

Layer chicken and soup mixture in casserole dish and top with one tube crushed Ritz crackers.

Melt 1 stick of butter and pour over top and bake at 350 for 30 minutes.

Its sooo yummy and easy!! Its easy to adjust for servings too. The above serves 4 - Just double it all to serve 8.

CHICKEN SATAY
1/4 cup BULL'S-EYE Original Barbecue Sauce
1/4 cup creamy peanut butter
1/4 cup fresh lime juice
2 Tbsp. chopped cilantro
1 lb. boneless skinless chicken breasts, cut into strips
12 wooden skewers

MIX barbecue sauce, peanut butter, lime juice and cilantro in resealable plastic bag. Add chicken; seal bag. Turn bag over several times to evenly coat chicken with the barbecue sauce mixture. Refrigerate at least 1 hour or overnight to marinate.
PREHEAT grill to medium-high heat. Remove chicken from marinade; discard marinade. Thread chicken onto skewers.
GRILL chicken 4 to 5 minutes on each side or until chicken is cooked through.

I think I've found a search engine with a sense of humor - I was actually looking for articles on how to cook lobster, and here I am on a site called Tuesday:Chicken. Look, I hope you don't mind, but I found your blog using how to cook cabbage as a search term. I'm trying to find original articles and recipes for my cooking websites.

I can and do use the article directories, but much of the stuff in them is hardly original and gets widely used. I'm hoping to persuade people like you, who have an interest in cooking, to contribute as well. I use a wide variety of articles and styles - just so long as it's food orientated - and I think the kind of things you write about in Tuesday:Chicken would be very popular :0)
